Take the fresh paneer and cut it into thick cubes or rectangular blocks, about 1 to 1.5 inches in size so that it should be enough to hold up well when grilling or cooking.

Now, same as the paneer, cut the onion, capsicum (bell pepper), and tomato into thick slices or chunks so that they hold up well during grilling or cooking. First, peel the outer part of the onion and cut it into thick slices or wedges, about 1/2 inch to 1 inch of thickness. Next, wash capsicum (bell pepper) and remove the stem, seeds, and inner membranes.

Prepare for marination: In a bowl, add 1 tablespoon of chili powder, 1/2 tablespoon of Kashmiri red chili powder, 1 tablespoon of garam masala, 1/2 tablespoon of cumin powder, 1/2 tablespoon of turmeric powder, 1 tablespoon of coriander powder, 1 tablespoon of pepper powder, 2 tablespoon of chickpea flour (besan), 1 tablespoon of ginger garlic paste, 1 tablespoon of dried fenugreek leaves (kasturi methi), 3 tablespoon of yogurt (curd), 1 tablespoon of carom/ajwain powder (as optional), 1/2 tablespoon of chat masala (as optional), and mix it well. After preparing the marinade, add the chopped onion, tomatoes, capsicum (bell pepper), and paneer cubes and mix it well. Once it is done, marinate them for 35 minutes so that paneer and veggies absorb flavor and give better texture when it is cooked to grilled.

Take skewers and arrange the marinated pieces of onion, capsicum (bell pepper), tomatoes, and paneer one by one. Keep little space between them, so that it helps to cook or bake properly.

Take a pan and preheat small amount of oil over a medium flame as a base. Gently place the skewers on the pan. Apply or spray some oil on them and fry. Fry the paneer cubes for 2-3 minutes on each side or until they turn golden brown and slightly crispy on the outside. Avoid overcrowding the pan and cook in batches. Once the paneer is cooked, take it out of the pan and serve it with mint chutney and sliced onions if you prefer.
