Ginger: Choose fresh ginger and remove any dirt by washing it. Scrape off the skin gently and cut into small pieces. Garlic: Choose firm garlic and separate the cloves. Peel each clove for blending. Green Chilies: Take 4 fresh chilies and cut them into pieces as shown in the image. Lemon: Cut the lemon into half and keep it ready for further recipe instruction.

Take a blender jar and place the chopped green chilies, garlic, ginger, pudina (mint) leaves, coriander leaves, curry leaves, coriander powder, black pepper leaves, turmeric powder, and salt.

Blend all the listed ingredients to prepare the ideal seasoning masala for marinating the fish. Add lemon juice to the blended masala.

Apply the blended masala to the fish and marinate them for at least 30 minutes. Keep some amount of masala aside to use while frying the fish.

Take a pan, apply some amount of cooking oil to the base of the pan, and preheat it in a medium flame.

Once the pan gets heated, place the marinated fish into the pan gently. Keep some space in between by not overcrowding on the pan. Spray or apply some oil on top of it and turn the flame to medium-high.

Cook the fish for 3 minutes on the first side and turn it over to another side. Once again spray or apply oil to avoid sticking.

Now apply the remaining blended masala to the fish for ensuring optimal flavor and texture. Fry for 2 minutes.

Apply blended masala to the other side of the fish and fry it for 2 minutes.

Once the fish is fried on both sides, drain the excess oil using a paper towel. Arrange on a serving platter with onion and lemon wedges.

Additional tips
Ensure the oil is hot before adding fish, and don’t move until the masala turns crispy.
Reduce the heat and flip the fish to the other side to cook when you feel the dish is burning.
Press the fish gently from the top while frying, so that the marinated fish contacts with the pan evenly.
